The main flavour components of ghee are carbonylsfree fatty acidslactones, and alcohols. Along with the flavour of milk fat, the ripening of the butter and temperature at which it is clarified also affect the flavour. For example, ghee produced by the clarification of butter at 100 °C (212 °F) or less results in a mild flavour, whereas batches produced at 120 °C (248 °F) produce a strong flavour.
